Top o’ the day to ya! And happy spring forward. It’s amazing what a little extended lightness at the end of the day can do for us all. Whoohoo!

As I am writing this, the 66th annual Newport St. Patrick’s Day has already happened here….and it was a rainy, cold gray day, however, that did not stop the revelers from enjoying our City-by-the Sea all dressed in green! I steered Matt away from the parade (can you believe it?) to just go and enjoy a traditional corned beef sandwich and a pint of Guinness at our favorite cozy and festive local pub, Cappy’s. Then we hightailed it home to make our own Irish meal of corned beef, potatoes and cabbage and my favorite Irish Soda Bread for our boys.

And IMO, they make such a prettier presentation than the traditional loaf of Irish Soda Bread!

This time around I made Irish Soda Bread Scones which I will now be making as part of our traditional meal. However, it was not just any old Irish Bread recipe…this one comes with a side of Salted Whiskey butter. Yum! Thank you to ‘A Cozy Kitchen’ for the recipe inspiration! RECIPE for Salted Whiskey Butter from A Cozy Kitchen

If you already have your favorite Irish Soda Bread recipe, give this Salted Whiskey Butter a try!

  • 3 tablespoons Irish whiskey

  • 6 tablespoons unsalted butter

  • 2 tablespoons powdered sugar sifted

  • 1/4 teaspoon Newport Sea Salt pure flaky sea salt

    Directions:

    To make the butter, add the whisky to a small saucepan. Cook for a few minutes, until it begins to simmer slightly and it decreases to about 2 tablespoons - letting the alcohol cook off. Allow the whisky to cool completely. To a small bowl, add the softened butter, sifted powdered sugar, cooled Irish whiskey and our sea salt. Using a hand mixer, beat until fluffy.
