Forget the Cheese Plate and Bring this to Your Next Party!
/Before you go to your next party, BBQ, or picnic, and need a crowd pleaser appetizer make this awesome Roasted Pineapple whipped ricotta topped with sea salt. Oh MY!!!
Last night, I had a few friends over for a craft night/appetizer get together at our house. My boys had headed down to Connecticut a day earlier and I was actually lonely and the house was far too quiet. One night is okay for Netflix and Ben and Jerry’s, but two nights is way too sad. Inviting people over actually makes me dust and scrub places that needed some extra attention. I should have people over more often! ;) So, I made a plea for some friends to join me at our house for a little Sea Salt recipe research night as well as to get crafty.
My friends, Jillian and Amy came ready to get their craft on and to enjoy non-kid food while sitting on our deck. As Julia Child famously said, “People who love to eat are the best people.” And they make the best food! Case in point, Jillian brought the ingredients over to make a pineapple and ricotta app. While we sipped on chilled rosé and meloncello (an italian liquor…don’t worry, Matt there is still some left!) she prepared this delicious appetizer. We prepped the plates of brie, strawberries, grapes and boursin stuffed mushrooms as well as a baguette with chipotle cream spread, roast beef, arugula and caramelized onions and settled outside on our deck for small plates of delicious food. I think we were all ready to enjoy something other than family friendly burgers and hot dogs. We all devoured the roasted pineapple appetizer…what isn’t there to like?? A toasted baguette, creamy ricotta, roasted sweetened honey pineapple and a chiffonade of fresh mint and a sprinkle of sea salt - mama mia!! The sweet, salty and creamy flavors….AH-mazing! This could even be served as dessert...or breakfast...or snack! ;)
As I write this I cannot wait to go buy the ingredients to make this for Matt…and for our next picnic, BBQ, party. So, watch out friends and family here comes Roasted Pineapple and Whipped Ricotta topped with Sea Salt to our next get-together!

Roasted Pineapple Whipped Ricotta Toast with Sea Salt

Yield: makes 4 toasts total time: 35 minutes
ingredients:
6 pineapple rings
2 to 3 tablespoons honey, plus extra for drizzling
1/2 cup ricotta cheese
4 slices of your favorite bread, toasted
a handful of fresh mint leaves
sea salt for sprinkling
directions:
Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and place the pineapple on the sheet. Drizzle it with the honey. Roast for 15 to 20 minutes, until super golden and caramely. We broiled the slices for the last few minutes as recommended in the recipe.
Add the ricotta to a food processor and blend until it's smooth and creamy. (Jillian came with this already prepped.) Spread it all over your toast! Place the pineapple on the toast and sprinkle it with 100% pure and natural Newport Sea Salt and finish off the slices with a mint chiffonade.
